  • Long, Narrow Blade : Designed specifically for cutting sashimi, provides smooth, precise cuts without crushing the fish.
  • Patented Cromova 18 steel : Global knives are made of Cromova 18 steel. This type of steel is patented by Global and is therefore only used by them. Due to the very fine grain structure of the steel, the knives can be sharpened very sharply. They are sharpened by Global at 15˚ per side, for a total sharpening angle of 30˚. The chromium in the composition of the steel ensures that it has good corrosion resistance. So it concerns stainless steel. Cromova 18 has a hardness of 58 HRC. That is slightly lower than most Japanese kitchen knives. The advantage of this is that you can easily sharpen the knives yourself.
  • Convex ground : The blade of Global knives is convex ground. This means that the edge of the blade is ground in a U-shape instead of a V-shape. The advantage of a convex ground knife is that the edge is much stronger. You can also sharpen convexly sharpened knives yourself. You use a sharpening stone (or a belt grinder) for this, but you cannot use a pull-through sharpener.
  • Single-sided sharpened : Traditional for sashimi knives, this provides a sharper cutting edge and easier cutting control.
  • Versatility : Although optimized for sashimi, this knife is also excellent for other precision tasks in the kitchen.


Maintenance of your Global knives
Cleaning your Global knives is very easy. The blade and handle flow seamlessly into each other. Bacteria can therefore not get stuck anywhere. The stainless steel handle is also a lot less vulnerable than wood. The handle of Global knives does not split if it remains moist for too long. Even though the knives are made of stainless steel, we do not recommend putting them in the dishwasher. When the blade comes into contact with other hard objects, scratches can occur. In addition, high temperatures and powerful cleaning agents are harmful to the steel. Simply wash your knives by hand and dry them immediately.
