The Santoku Hammered stainless steel 18cm knife from Shinrai Japan is a multifunctional Japanese knife. You can use a santoku knife to cut, chop and slice vegetables, meat and fish. A santoku knife can be recognized by the high blade where the back of the blade slopes only close to the point. An advantage of a santoku knife is that they are lighter than most European kitchen knives and are therefore slightly easier to handle.
